hicken Curry my first website

colHaving spent the last week learning how to programme in html what better way to practise then a website on how to make a chicken curry like my mum's There are some hard to find ingredients Such as the pandan leaves And the Garcinia Cambogia Dry pods Which my mum calls rampay and Goraka respectively Unsurprisingly I was able to source from Amazon As they have everything these days. >3-4 1KG chicken thighs and drumsticks
  • 3-4 cloves
  • 4 cardamoms
  • 5-7 garlic cloves Chopped
  • 2 Finger chillies
  • 3cm ginger
  • ½ teaspoon Fennel seeds
  • ½ teaspoon Mustard seeds
  • Curry leaves
  • Turmeric powder
  • Salt
  • 1 tablespoon malt vinegar
  • Splash of soy sauce / worcestershire sauce
  • 6-8 chicken drumsticks (works best with meat on the bone)
  • ½ teaspoon tomato paste
  • 2 large onion halves Chopped
  • Howto make the marinade :Mix 3 teaspoons “curry powder” with 2 teaspoon of turmeric and -1 teaspoon of salt. – sprinkle on meat - and add vinegar – splash of soy sauce - mix with chopped garlic – half onion and chopped ginger and leave to marinade for 1-3hours. For spicier variety add in ½ -1 teaspoon of dried chillies or fresh chillies. 30 mls of warm water Mix everything together. I like to use extra large freezer bag See you later and screech the marinade into the meat without getting your hands dirty I can't emphasise the importance of leaving the mixture to marinate for several hours You should be able to leave this all morning on the stove top in a pan Or in the fridge overnight .

    MARINADE >

    For chicken curry 1 really important to marinade the chicken for few hours in the pre mixed curry powder, salt and turmeric. 2nd important bit – once cooked leave for 2-3 hours for flavours to come out >
    mix for marinade 3 teaspoons mixed spice mix” with 2 teaspoon of turmeric and 1 teaspoon of salt with Half the chopped garlic and half the chopped onion. >

    – sprinkle on meat - and add vinegar – splash of soy sauce - mix with chopped garlic – half onion and chopped ginger and leave to marinade for 1-3hours. For spicier variety add in ½ -1 teaspoon of dried chillies or fresh chillies.

    Method :Heat two tablespoons of olive oil and either add either add The dry ingredients ie the curry leaves panden leaves fennel seeds mustud seeds cardamoms cloves and cinnamon stick and fry for 1-2 minutes till aromatic or add the wet ingredients ie the chopped onions garlic ginger and chillies and fry till golden brown . Then add the chicken pieces and brown on all sides . Then add 400 mls of water and cover and simmer for 45 minutes to 1 hour till chicken is cooked through . If you want a thicker sauce remove the lid for the last 10-15 minutes of cooking . Check seasoning and add salt if needed . You can also add a teaspoon of sugar if you think it needs it . Serve with rice or naan bread or just on its own Enjoy>
